What is a Whipped Cream Dispenser?

A whipped cream dispenser is an aluminium or stainless steel device, which relies on 8-gram gas bulbs to pressurize the canister to instantly dissolve the gas into the liquids. When the cream dispenser’s valve is opened by pressing the lever the liquid is forced out of the nozzle by the high pressure, expanding the bubbles instantly to transform the liquid into a whip, mousse or foam.

How does a whipped cream dispenser make whipped cream?

To make whipped cream you must use a thickening (whipping) cream. This cream has a optimal fat content between 27-36%. When charging the N20 cream charger into the canister the N20 instantly dissolves into the fat. When the lever is pressed it releases the pressure causing the nitrous oxide to expand within the fat molecule, dispensing whipped cream.

This is why making whipped cream with a whipped cream dispenser creates 4x the amount as opposed to whipping air into the cream which produces half as much.

Will all liquids do this?

No, not all liquids alone will create whip’s, mousses or foams. However, you are able to infuse all liquids. For more information read about the rapid infusion technique. Check out our whipped cream dispenser recipe blog for more info.

Can you use any gas?

No, only 8-gram nitrous oxide cream chargers (N2O) or in extremely rare recipes CO2 bulbs. Nitrous oxide is used because it dissolves easily with the liquid and does not oxidize while in the canister. N20 in cream chargers also inhibits bacteria growth is odourless and tasteless. N20 bulbs can also be referred to as; cream chargers, whipped cream chargers, cartridges, chargers, nitrous cream charger, whipped cream cartridges, whippets or nangs.

 

How-To Use a Whipped Cream Dispenser

Start with a whipped cream dispenser recipe and putting the dispenser on a flat surface.

  1. Screw the head of the dispenser off of the container
  2. Put in desired liquids, syrups, sugars or extracts.
  3. Screw the head of the dispenser back on.
  4. Take 1 cream charger and insert it into your charger holder.
  5. Screw the charger holder onto the pin of your dispenser until you hear the gas escape ( it is not uncommon to have a little gas escape during this process).
  6. Shake the dispenser to mix the gas with the contents.
  7. Turn the dispenser tip down and press the lever to disperse.

 

How-To Clean Your Whipped Cream Dispenser

Don’t put the head of your whipped cream dispenser into the dishwasher, we recommend you wash it by hand.

  1. Start by removing the tip and cartridge holder.
  2. Turn the dispenser head over and remove the rubber or silicone gasket and pull the head valve out of the head. Note that some dispenser head valves cannot be removed. If you are not sure; give it a soft tug.
  3. Clean each of the parts separately with dish soap and water.
  4. Take the head of the dispenser without parts and clean it with dish soap and water until clean.
  5. Let all contents dry
  6. Once dry put them back into the head as they were.

Most whipped cream dispensers canisters are dishwasher safe. If you’re not sure if your canister is we recommend washing it by hand.

What should I do if my whipped cream comes out “liquidy”

Check to make sure that the cream you are using has a high enough fat content most whipping and thickening cream should be 32%. Nitrous oxide can lose potency after 5+ years, make sure you are using new or newer N2O cream chargers. Make sure you are shaking the dispenser before dispensing. Remember a 1 Liter dispenser requires 2 cream chargers, but a 0.5L only requires one.

Why won’t my whipped cream dispenser work?

If nothing is coming out of your dispenser when you press the lever, there is a good chance your head valve has stopped functioning properly. Replace the head valve. You can get replacement parts by contacting us.

Why is the whipped cream shooting out the tip when I charge the dispenser?

If this is happening it means the head valve is bad and you’ll need to replace your head valve.

What should you do if you’ve lost your cartridge holder?

If it is a new dispenser it can be easily replaced by contacting us if you have an iSi or Mosa whipped cream dispenser. If you have an older model (15+ years) we recommend looking on Ebay.

What should I do if gas is escaping from the head and container seal?

This shouldn’t ever happen if your rubber or silicone gasket is properly placed in the head and the head of the dispenser is screwed on tight to the container. Check to make sure your gasket doesn’t have any lacerations. If you find you don’t have a gasket or your’s is not working, call us to get a replacement for your iSi or Mosa dispenser.

They is a small release hole in the bulb dispensers this is a safety feature incase they is an issue with the vavle the gas has a form of escape. They may be a problem with the valve if this is happening regually. You could try removing it and soaking in warm water. Thanks CW

    I used my whipped cream dispenser for the first time. The recipe I used to sweeten the cream didn’t have enough sugar. I’m not sure how I should go about opening the canister to put more sugar in it.

    Hi, how do I refill? Will i need to bleed out the n20 b4 opening the dispenser? And if I open the dispenser , does that mean i need to reload a new N20?

      Hi,

      Yes the dispensers must be empty of gas before unscrewing the top. Once the cream is filled you will need to secure the the top and reload a new N2O charger and refill the dispenser with gas.

    You have a few different brands of cream chargers. and some of them are a lot cheaper than the others. What is the reason for the varying price. Quality or ammount of gas?? Do they all have the same end fitting?

      They is some differences on the quantity of gas. The iSi PRO are 8.4g, SupremeWhip 8.2g, QuickWhip 8g, Bestwhip & Whip-it 7.8g. They are all universal fitment. Regarding price as with many products some makes charge a premium for thier name. They will all give you the same end result.

        My 1L whipper says you can Only use one charger per use. That’s seems odd given so many recipes
        use more than one charger. Does that seem right? Should I try anyway?

          Hi,

          With the 1000ml whippers you can sometimes need up to 3 or 4 depending how much liquid you have added and also what the liquid is. I would reccomed adding 2 chargers to start with and if it starts to loose pressure and spit and another charger give it a quick shake and start again. This can be repeated again if necessary.

    Do I leave the N2O Cream Charger in attached to the canister after im finished using it? How long does one charger last? And is it safe to place the charger in the fridge after using?

      Hi,

      Once the gas has been expelled from the charger in to the dispenser the charger can be removed from the holder and disposed of and you should have a small cap to place on the dispenser instead of the charger holder. When not using the dispenser the cream can stay fresh for up to 14 days if kept refridgerated.

    Hi at work we just got an Otis classic professional series 2 whip cream dispenser I fill it with a pint of cream and other ingredients and use on charger the problem is when it seems to be done it’s always filled to the top with cream when I go to refill it I’ve tried recharging it to but nothing but air would come out why is this

    Is the size of a whipper the size of the canister, the volume it makes, or the max cream/liquid you can use in it? Trying to figure out recipes from the internet. If I only put about 125ml cream in my 1/2L (max capacity) whipper do I need an extra charge to make up for the less volume?
